Rosa Sicilian Chicken


1 lb. Rosa Cut Ziti #34
3 cans Rosa 28 oz. San Marzano Crushed Tomatoes
3 white potatoes (peeled)
2 cups water
1 whole roasting chicken (5+ lbs.)
1 medium onion (chopped)
2 tbsp. Rosa Basil
1 tbsp. Luna Fine Sea Salt
1 tbsp. Rosa Fine Black Pepper


Preheat oven to 375 degrees. Cook the pasta according to the package directions 15 minutes prior to chicken being finished. In a large baking pan place whole chicken in center. Pour tomatoes around and on top of chicken. Add whole potatoes around chicken. Add water, onion and spices around and on top of chicken. For every pound of chicken cook for 30 minutes. Baste chicken 3-4 times during cooking time. Remove pan from oven and lift chicken out onto a separate bowl. Debone chicken and add meat back to baking pan. Slice potatoes in the sauce and stir. Add the sauce on top of the pasta and serve immediately. Add Rosa Grated Romano or Parmesan Cheese if desired.
