To be labeled as Balsamic Vinegar of Modena I.G.P., the vinegar must be made according to strict regulations set forth by the Italian Consortium of Balsamic Vinegar of Modena. These regulations specify that the vinegar must contain at least 20% grape must and be aged for a minimum of two months in wooden barrels, with the final product being tasted and approved by a panel of expert tasters.
Balsamic Vinegar of Modena I.G.P. is known for its sweet and tangy flavor, with notes of caramel and oak from the aging process.
